Yummy Treats

I really enjoy cooking, but mostly I enjoy making good desserts. I like to make them and then deliver them so that I don't eat too much (which will inevitably happen if they are in the house). I thought since I can't bring them to most of you, I'd share them through the internet...

FRUIT DIP
This one is so simple, yet tastes soooo good. I made it for an enrichment and got lots of compliments and requests for the recipe.

INGREDIENTS:
1 8oz pkg. cream cheese
1 jar marshmallow crème
1 tsp vanilla
A few drops food coloring

Make sure the cream cheese is soft so that you don't end up with clumps. Mix all ingredients with a mixer and you are good to go.

WHITE CHOCOLATE MACADAMIA NUT COOKIES
These cookies are awesome!
INGREDIENTS:
1/2 cup butter
1/2 tsp baking soda
3/4 cup white sugar
1/2 tsp salt
1 egg
1 tsp vanilla
1 1/4 cups flour
White chocolate chips (desired amt)
Macadamia nuts, chopped (desired amt)

I buy the macadamia nuts in bulk so they are less expensive. They go a long way.

DIRECTIONS:
1) Preheat oven to 375 degrees
2) In bowl cream together butter and sugar. Stir in the egg and vanilla.
3) Combine flour, baking soda and salt and add to above mixture.
4) Stir in chocolate and nuts.
5)Drop cookies onto ungreased cookie sheets about 2 inches apart.
6) Bake for 8 to 10 minutes until lightly browned. Cool on wire racks. Store in airtight container after cool.

PEANUT BUTTER BARS
These are just as good as peanut butter cups and are super easy to make. No cooking required!


INGREDIENTS:
1 cup butter/margarine, melted
1 cup peanut butter
2 cups graham cracker crumbs
2 cups powdered sugar
1 1/2 cups milk chocolate chips
4 tablespoons peanut butter


One pkg of chocolate chips is a little more than 1 1/2 cups, but I just use an entire bag anyway.

DIRECTIONS:
1) In bowl, mix together butter, graham crackers crumbs, powdered sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9X13 inch pan. (It will look a little runny, but will stiffen right up in the refrigerator.)
2) Put pan in refrigerator to chill while you mix chocolate mixture.
3) In microwave, melt the chocolate chips with 4 TBLS peanut butter, stirring occasionally until smooth. (DON'T BOIL)
4) Spread chocolate over prepared crust. Refrigerate for at least one hour before cutting into squares. (Pull them out of the refrigerator to thaw a titch before cutting. It makes it easier.


As you can see, Logan approves of these bars with much enthusiasm.

It all sounds so yummy. I'm kind of struggling right now finding certain ingredients for other recipes but I think all of these are possible here, except for maybe the marshmallow creme. And the fact that fresh fruit and vegetables if not washed with bleach can give you bacterias that I am paranoid about. And how will a strawberry taste washed in bleach???

Thanks for the recipes - I love recipes. I too love to make desserts. Why can't I love to make healthy foods and they taste just as good as the desserts?

They all look so good - I think I need to go drink some water and go to bed.

They all look delicious! We'll have to try the PB bars since we are a PB luvin family. I'd love the macadamia cookies and the fruit makes me miss summer already!
