I decided to make a banana cream pie because it was easy. I'm not a huge fan of banana cream because it is so runny, but I found a recipe that looked promising so gave it a try. IT WAS FABULOUS! It isn't runny and tastes even better the second day. Here is the recipe if any of you are interested:
BANANA CREAM PIE
INGREDIENTS:
3 cups heavy whipping cream
1 (3.4oz) package instant banana pudding mix
1 (3.4oz) package instant vanilla pudding mix
Approx. 5 bananas
2 (9 inch) pie shells, baked
whipped cream
DIRECTIONS:
1. Using an electric mixer, whip 3 cups whipping cream on low speed until it starts to thicken. Increase speed and add vanilla and banana pudding mixes, whipping until pudding mixes are blended fully with the cream and the mixture thickens. Increase speed to high and beat until mixture is stiff.
2. Line the bottom and half way up the sides of pie crust with banana slices. Cover banana slices with banana cream mixture and cover completely with (yes more) banana slices. Top with whipped cream. Refrigerate one hour before serving. (I think the longer the better)
Here is the finished product...

P.S. I learned something neat about the crusts. First poke them with a lot of holes to keep bubbles out. Then put a pie pan (or aluminum foil filled with rice or beans) inside the crust to keep it all nice and even. The crust turned out amazing without any bubbles and was cooked evenly all over.

That. Looks. HEAVENLY.
How funny that you and Kimber both have Pi day posts. Is there some official Pi day that I don't know about? The pie looks yummy and I look forward to trying it.
Thank you so much for bringing an entire pie for us to enjoy. I think I gained 5 pounds:) It is so yummy..
Could you please email me a slice. it looks so good. I'm excited to try this someday. I'm glad you had fun at the Pi day. It's a really fun idea and will have to remember March 14 as a designated party day.
Yeah - I just read Kellie's Kimber's, and now your blogs where you each had PI day. So I had to look it up - yup March 14th is official Pi day where math enthusiasts celebrate it because "pi" is equal to roughly 3.14 (March 14th). Interesting. I had no idea.
http://en.wikipedia.org/wiki/Pi_Day has more information. The funny thing is everyone seems to celebrate it with pie - the kind you eat. Any reason to celebrate I guess.
P.S. That pie does look really yummy. I'm with Kellie - please email me a slice.
I'll have to try this pie recipe. I also like a firm banana cream pie.
How fun to see the pi celebrations across the country! I thought it was just a teachers fun idea, not a National Holiday :)
PI ha
Funny you(and Kimber) should mention that.
